Simple, Delicious Coconut Biscuits That You Can Make Using A Hammer

Ingredients
  • 110g unsalted butter
  • 130g self raising flour
  • 150g grated coconut (or desiccated coconut if you're not feeling adventurous)
  • 175g caster sugar
  • 1 egg (beaten)

These coconut biscuits are super simple and super delicious! You need only 5 ingredients and how many baking recipes require the use of a hammer? Ok, the hammer part is optional but HIGHLY recommended after a rough day at work!

Now, you CAN use desiccated coconut but I'd strongly recommend using real, grated coconut. It's much fresher and therefore tastier – and it's dead easy to crack the little buggers open using just a screwdriver and a hammer.

Instructions

Step 1

Preheat the oven to 160°C and get your ingredients together.

Put the butter in a pan.

Heat the butter slowly until it's completely melted.

Put the self raising flour, coconut and caster sugar in a clean mixing bowl and mix well. Then add the melted butter and mix again.

Continue mixing until a dough starts to form.

Add the beaten egg and mix until everything is fully incorporated. Spoon the mixture onto a baking sheet lined with baking paper leaving space between the biscuits (the mixture will spread as it cooks).

Bake for 15-20 minutes or until the biscuits are golden brown.

Leave to cool, remove from the baking baking paper et viola!
