- 2 Steaks (Cut Of Your Choice)
- 10 Stalks Of Asparagus
- 2 Handfuls Of Rocket
- For The Marinade:
- Juice Of 2 Lemons
- 2 Tablespoons Of Olive Oil
- 2-3 Cloves Of Garlic, Peeled And Bruised
- 1 Teaspoon Of Coarse Salt
- Fresh Ground Pepper
This week India Power is showing us how to make a juicy steak that’s super healthy, but still feels like an indulgence. Her lemon & garlic steak with rocket and asparagus is the perfect dish to add to your collection, she has it every week as a perfect last minute dinner.
We love these quick, no-nonsense recipes that are meaty, delicious yet totally guilt free.
Add all of the marinade ingredients to a glass an stir around, then pour half of it into a baking dish and set the other half aside. Place your steaks in the dish and swirl them a bit in the marinade and then flip them over and leave them to soak while you heat the pan.
Heat some coconut oil in a pan on high heat. The key to a really great steak is to make sure the pan is piping hot before putting the steak in, and to only ever flip it once! Throw away the marinade and wash the dish. Then pour the other half of the marinade into the clean dish (trust me!).
While the steak is cooking, plate the rocket and boil the asparagus. It should only take about 4 minutes, take them out as soon as the water starts to go green. Plate them on top of the rocket.
Here's what makes this so special: as soon as you take the steak off the pan, put it back into the dish with the fresh marinade. Flip it and let it absorb the lemony goodness
Then pop it right on top of your bed of greens and drizzle with some of the marinade from the dish. Season with salt and pepper and Enjoy!
