Emma's Healthy 10 Minute Pesto Pasta

Ingredients
  • Spelt Spaghetti (You Can Use Plain Spaghetti Instead)
  • 3 Tbsp Pesto
  • 3 Shallots (Or 1/2 An Onion)
  • 1 Handful Cherry Tomatoes
  • 1 Cup Spinach Leaves
  • Parmesan Cheese

With summer well and truly after arriving many of us are trying to be a little bit healthier with our holidays fast approaching. That’s no reason to miss out on the finer things in life… Like pasta! Making a substitution like spelt pasta for plain pasta makes a difference, and adding in ingredients packed with goodness (like the pesto, spinach and tomatoes) will make you feel seriously saintly. This tastes great though, you really don’t feel like you’re missing out on anything. And best of all? It only takes 10 minutes to make.

Instructions

Step 1

Slice the shallots/onion finely and half the cherry tomatoes. In the meantime throw the spaghetti into a pot of boiling water on a medium high heat and cook to packet instructions (I find spelt pasta cooks quicker than plain pasta).

Throw them into a frying pan on a medium heat with a little oil, after they've been cooking for around 5 minutes add the spinach and fry until just wilted.

Then stir in the pesto, cooked spaghetti and a little of the water that the spaghetti cooked in if it needs it to loosen out the pesto and veggies into a nice sauce.

Top with a little grated parmesan cheese and serve!

That really couldn’t have been easier, so no excuses now for a last minute healthy dinner!
