It officially opened for business yesterday - but Simone's a.k.a The Healthy Baker is already getting a Fat Rascal of a reputation - the queues speak for themselves. Snuggled amongst Manchester Arndale Market's other bustling stalls - Simone's is certainly taking the cake (excuse the obvious pun) in terms of business and attention.

If you don't want to miss out on your afternoon tea fix, we recommend you head down there fast (opening hours daily 11.30am - 6pm) The Beetroot Chocolate Cake tastes just as magnificent as it looks but there are plenty of other decadent treats on display including peanut butter brownies, freshly baked banana bread and healthy refined sugar-free, butter-free and flour-free muffins! 

Oh and don't miss the fridge-freezer at the back, there are some pretty rocking cheesecakes chilling in there available to take-away, and they're good enough to give any vegan-sceptic a taste of humble pie.

Simone Yau and Nelson Lam are the brains behind the venture. Lam is the pioneer of Viet Shack - located so close to Simone's just opposite that the pair will be able to wave to each other - although we're sure that's not why they did it. The Asian influence trickling through these sumptuous goods is easily identifiable - with the Green Tea Brownie being a top recommendation from Nelson. Although he insists all are unmissable, naturally.

With a range of fully-loaded healthy sourdough sandwiches as well as bakes, Simone's is a good spot to grab-and-go a feel-good lunch and perfect if you fancy a sweet treat but don't want to spend 2 hours cursing your inner sugar demon afterwards.
